Add the vanilla and eggs, mixing until just combined. Then, add the dry ingredients and mix until a dough forms. Chill the dough for 30 minutes to make it easier to roll into balls.
Make the Apple Filling: Peel and dice your apples. Add all the apple filling ingredients to a medium pan over medium-high heat. Cook for 15-18 minutes, stirring frequently. Once the apples reach your desired tenderness, transfer the mixture to a bowl and let it cool.
Make the Salted Caramel Sauce: Follow my easy 10-minute recipe to make the salted caramel sauce. Allow it to cool at room temperature for about 20 minutes until it thickens.
Scoop & Chill the Dough: Scoop the dough into balls weighing about 65 grams each and place them in an airtight container. Chill in the fridge for at least 4 hours or freeze for 2 hours.
Make the Crumble: Preheat the oven to 350°F. Melt the butter in a bowl and add the remaining streusel ingredients. Mix until crumbly. Spread on a parchment-lined pan and bake for 12-14 minutes until golden brown. Let it cool.
Bake the Cookies: Preheat your oven to 365°F. Line cookie sheets with parchment paper. In a small bowl, mix the sugar and spices for coating. Roll the dough balls in this mixture and place them on the sheets. Bake for 10-12 minutes until the edges are set. Let cool for a couple of minutes before transferring to a wire rack.
Assemble Cookies: Spoon apple pie filling into the cooled cookies, sprinkle on the crumble, and drizzle with salted caramel sauce.
