Ingredients
  

Brownie Base

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Chocolate Mousse

  • 1 cup heavy cream
  • 4 ounces semi-sweet chocolate, chopped
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for mousse)

Chocolate Ganache

  • 4 ounces semisweet chocolate (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions
 

Prepare Brownie Base

  • Preheat your oven to 350°F (175°C). Grease a brownie pan or line it with parchment paper.
  • In a mixing bowl, combine cocoa powder, granulated sugar, flour, and salt.
  • Add the melted butter, eggs, and vanilla extract, and stir until well combined.
  • Pour the brownie batter into the prepared pan and smooth it out evenly.
  • Bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs. Let it cool completely.

Prepare Chocolate Mousse

  • Melt the chopped chocolate in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.
  • In a different bowl, whip the heavy cream and powdered sugar until soft peaks form. Fold the melted chocolate into the whipped cream gently.
  • Spread the mousse over the cooled brownies and refrigerate for at least 1 hour.

Prepare Chocolate Ganache

  • Heat the heavy cream until warm, then pour it over the chopped semisweet chocolate. Let it sit for a few minutes, then stir until smooth.
  • Pour the ganache over the mousse layer and spread it evenly.

Serve

  • Refrigerate until set, then cut into squares and serve.

Notes

Serve the brownies chilled. They are perfect on their own, but you can add a dollop of whipped cream or fresh berries on top. Store in an airtight container in the refrigerator for up to five days.
