Ingredients
  

Main Ingredients

  • 1/2 cup chopped strawberries (chopped into 1/2 inch cubes) Chop strawberries into even pieces for a smoother blend.
  • 1 1/3 cups unsweetened applesauce
  • 4 1/2 tsp unflavored gelatin powder Ensure the gelatin is completely dissolved to avoid lumps.

Instructions
 

Preparation

  • Line the sides and bottom of an 8-inch or 9-inch square pan with a large sheet of parchment paper.
  • Add the chopped strawberries and applesauce to a blender. Blend on high speed until the strawberries are fully pureed.
  • Pour the puree into a large heat-proof mixing bowl. Sprinkle the gelatin over the puree and whisk until fully mixed in.
  • Using the double boiler method, dissolve the gelatin completely without boiling.
  • Remove the bowl from heat and let it cool for about 10 minutes.

Mixing

  • Pour the mixture into the bowl of a stand mixer. Use the wire whisk attachment and beat on the highest speed for about 15 minutes.
  • The mixture should increase in volume and look like airy whipped cream.

Setting

  • Pour the mixture into the prepared pan and smooth it evenly across the surface.
  • Place the pan in the fridge for at least 1 hour to set.

Notes

Serve chilled and optionally top with whipped cream or fresh strawberries. Store any leftovers in the fridge for up to 3-4 days.
