Ingredients
  

For the cake

  • 3 cups all-purpose flour (375g)
  • 2.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter, softened (226g) For the cake batter
  • 2 cups granulated sugar (400g)
  • 4 large eggs
  • 2 tsp almond extract
  • 1 tsp vanilla extract
  • 1 cup whole milk (240ml)
  • 0.5 cup sour cream (120g)

For the frosting

  • 2 cups unsalted butter, softened (452g)
  • 5 cups powdered sugar (600g)
  • 3 tbsp heavy cream
  • 1 tsp almond extract
  • 1 tsp vanilla extract

For decoration

  • 2 cups sliced almonds, lightly toasted
  • to taste Fresh strawberries
  • to taste Fresh blueberries
  • to taste Fresh raspberries
  • for dusting Powdered sugar
  • optional edible gold leaves or mint leaves For decoration

Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease and line two 8-inch round cake pans with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large mixing bowl, beat butter and sugar until light and fluffy.
  • Add eggs one at a time, then mix in almond and vanilla extracts.
  • Alternate adding the dry ingredients with milk and sour cream until the batter becomes smooth and creamy.
  • Divide the batter evenly between pans and bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake layers to cool completely before frosting.

Frosting

  • Beat butter until fluffy. Gradually add powdered sugar, heavy cream, almond extract, and vanilla until silky smooth and bakery-style creamy.
  • Frost the cake evenly around the sides and top with a smooth layer of frosting.
  • Gently press toasted sliced almonds all around the sides of the cake for a crunchy bakery-style finish.
  • Decorate the top with fresh strawberries, blueberries, raspberries, and a light dusting of powdered sugar.
  • Add edible gold leaves or mint leaves for an elegant final touch.
  • Chill slightly before serving for the freshest, creamiest cake experience.

Notes

Ensure all ingredients are at room temperature for the best mixing results. When toasting almonds, keep a close eye on them in the oven to prevent burning. Consider adding other fruits like raspberries or blackberries for an extra tart contrast. Substitute some of the milk with almond milk for a deeper almond taste.
