Ingredients
  

Vegetables and Oil

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, sliced
  • 10 oz frozen peas
  • 2 stalks celery, sliced
  • 1 tsp turmeric powder

Broth and Seasoning

  • 4 cups chicken broth Homemade preferred for more flavor.
  • to taste Salt and pepper
  • Cooked chicken, shredded (optional) For added protein
  • Fresh herbs for garnish (optional) Such as parsley or cilantro

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and cook until translucent.
  • Stir in minced garlic, sliced carrot, and celery. Cook for about 5 minutes.

Cooking

  • Add frozen peas and turmeric, stirring to combine.
  • Pour in the chicken broth and bring to a boil.
  • Reduce heat and let simmer for about 20 minutes.
  • If using, add shredded cooked chicken and heat through.
  • Season with salt and pepper to taste.

Serving

  • Serve warm in bowls, garnished with fresh herbs if desired.

Notes

For more flavor, use homemade chicken broth if possible. Feel free to add other vegetables like spinach or bell peppers. Adjust the turmeric according to your taste preference. For a spicy kick, consider adding black pepper or red pepper flakes.
