Ingredients
  

Crust

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/4 cup melted butter

Cheesecake Filling

  • 8 oz cream cheese, softened Make sure the cream cheese is softened for a smooth texture.
  • 1/2 cup sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 2 eggs Add one at a time, mixing well after each addition.

Topping

  • 2 cups spiced apples (cooked and diced) Can use store-bought or homemade.
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of mini cheesecake cups.
  • In a separate mixing bowl, beat the cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  • Pour the cheesecake mixture over the crusts, filling them about 3/4 full.
  • Add a layer of spiced apples on top of the cheesecake batter.
  • In another bowl, mix the rolled oats, brown sugar, and cinnamon to create the oat crumble. Sprinkle this mixture over the apples.

Baking

  • Bake in the oven for 20-25 minutes or until the center is set.
  • Allow to cool, then refrigerate for at least 2 hours before serving.

Notes

Serve chilled for the best flavor. Top with whipped cream or vanilla ice cream if desired. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
