Ingredients
  

Apple Filling

  • 4 small small tart apples, peeled, cored, and finely diced
  • 30 g brown sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon ground cinnamon
  • 50 g water

Cupcake Batter

  • 185 g cake flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 115 g unsalted butter, softened to room temperature
  • 200 g granulated sugar
  • 3 large large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 150 g milk (dairy or non-dairy)

Cinnamon Cream Cheese Frosting

  • 60 g unsalted butter, softened to room temperature
  • 125 g cream cheese, softened to room temperature
  • 75 g powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions
 

Apple Filling

  • In a saucepan, mix the diced apples, brown sugar, cornstarch, ground cinnamon, and water. Cook over medium heat until the apples soften and the mixture thickens. Remove from heat and let it cool.

Cupcake Preparation

  • Preheat your oven to 180°C (350°F).
  • In a bowl, whisk together the cake flour, baking powder, ground cinnamon, and salt.
  • In another bowl, beat the softened butter and granulated sugar until creamy.
  • Add the eggs one at a time and mix well. Stir in the vanilla extract.
  • Gradually add the flour mixture and milk, blending until smooth.

Baking Cupcakes

  • Fill cupcake liners halfway with the batter. Add a spoonful of the apple filling on top, then cover with more batter until the liners are about three-quarters full.
  • Bake for about 20-25 minutes or until a toothpick comes out clean. Let the cupcakes cool completely.

Frosting and Assembly

  • In a bowl, beat the softened butter and cream cheese until smooth.
  • Gradually add in the powdered sugar, ground cinnamon, and vanilla extract. Mix until creamy.
  • Once the cupcakes are cool, frost them with the cinnamon cream cheese frosting using a piping bag or a knife.
  • Optionally, sprinkle a little cinnamon on top for a nice touch.

Notes

Make sure your ingredients are at room temperature for better mixing. For an extra apple flavor, you can add some apple pie spice to the cupcake batter. Feel free to swap out the tart apples for sweeter varieties if you prefer a milder taste. Don’t overmix the batter; mix until everything is just combined for fluffy cupcakes.
