Ingredients
  

Main Ingredients

  • 8-10 slices bacon, cooked and chopped Use crispy bacon for best flavor.
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth Vegetable broth can be used for a vegetarian version.
  • 1-2 tsp salt Adjust to taste.
  • 1 tsp black pepper
  • 1 tsp garlic powder Or use 4 cloves of minced garlic.
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes Optional, adjust for spice preference.
  • 16 oz gnocchi Cooked until tender.
  • 2 cups heavy cream or half-and-half For a lighter version, use low-fat milk.
  • 2 cups shredded cheddar cheese Medium or sharp, adjust to taste.

  • Cook the bacon until crispy, chop it, and set it aside.
  • In a large pot, heat the butter or olive oil. Sauté the diced onions and sliced carrots until tender, about 5-7 minutes.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Stir in the heavy cream, seasonings, and shredded cheese until the cheese is melted.
  • Add the gnocchi and cook for about 2 minutes, until soft.
  • Fold in the crispy bacon and adjust seasoning if needed. Serve hot.

Notes

Pair with warm bread or salad. Store leftovers in airtight container in the fridge for up to 3 days. Do not freeze.
