Ingredients

  • 4 slices slices of bacon Chopped and cooked until crispy.
  • 8 large large eggs Whisked with salt and pepper.
  • 1 cup cooked sausage Can use pre-cooked sausage for convenience.
  • 1 cup diced golden potatoes Cook until golden and tender.
  • 1 cup shredded cheese (cheddar or your choice) Use any preferred cheese.

For Assembly

  • 4 large large tortillas For wrapping the burritos.
  • 2 tbsp butter For cooking the potatoes.
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a skillet, melt the butter over medium heat.
  • Add the diced potatoes and cook until golden and tender.
  • In a bowl, whisk the eggs, then add salt and pepper.
  • Pour the eggs into the skillet with the potatoes and stir gently, scrambling until the eggs are firm.

Cooking

  • In another pan, cook the bacon until crispy, then chop it into pieces.

Assembly

  • Place the scrambled eggs, bacon, sausage, and cheese in each tortilla.
  • Roll up the tortillas tightly, folding in the ends.
  • Optionally, toast the burritos in a skillet until golden on the outside for extra crunch.

Serving

  • Serve the burritos warm on a plate, optionally with sides like salsa, avocado, or hot sauce.

Notes

For a healthier option, try using turkey bacon. Customize fillings with vegetables or different cheeses. Leftovers can be stored in an airtight container for up to 3 days. Reheat in the microwave or skillet.
