Main ingredients

  • 2 Tbsp salted butter, room temperature Use unsalted butter if preferred.
  • 2 slices sourdough bread Can substitute with any bread of choice.
  • 1/2 cup shredded Colby jack cheese Feel free to use cheddar or pepper jack.
  • 4 slices crispy bacon For a healthier option, use turkey bacon.
  • 1/4 cup guacamole Use fresh guacamole for best flavor.

Preparation

  • Heat a skillet over medium heat.
  • Spread butter on one side of each slice of bread.

Assembly and Cooking

  • Place one slice of bread in the skillet, butter-side down. Layer with shredded cheese, bacon, and guacamole.
  • Top with the second slice of bread, butter-side up.
  • Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until the cheese is melted.
  • Remove from skillet, slice, and serve hot.

Notes

Serve hot with a side of tomato soup or a green salad. You can also add fresh salsa or hot sauce for an extra kick.
