Ingredients
  

  • 6 large eggs
  • 1 cup cottage cheese preferably low-fat or full-fat, depending on preference
  • 1/2 cup shredded cheese cheddar, mozzarella, or a blend
  • 1/4 cup milk dairy or non-dairy
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs optional, such as chives, parsley, or dill
  • 1/2 cup spinach fresh or frozen, thawed and drained
  • 1/4 cup diced bell peppers optional

Instructions
 

Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

Prepare the Egg Mixture:

  • In a mixing bowl, crack the eggs and whisk them until fully combined. Add the cottage cheese, shredded cheese, milk, garlic powder, onion powder, salt, and pepper. Mix until smooth.

Add Veggies:

  • Stir in the spinach and bell peppers (if using). Make sure the veggies are evenly distributed in the mixture.

Transfer to Baking Dish:

  • Pour the egg mixture into a greased baking dish (9x9-inch or similar).

Bake:

  • Bake in the preheated oven for 18-20 minutes or until the eggs are set and lightly golden on top. You can check for doneness by inserting a knife into the center—if it comes out clean, it's ready.

Garnish and Serve:

  • Let the baked eggs cool for a few minutes, then garnish with fresh herbs if desired. Slice and serve warm.
