Ingredients
  

Crust

  • 1 prepared pie crust or sweet tart crust 1 prepared pie crust or sweet tart crust (pâte sablée), Optional: powdered sugar for dusting Optional: Powdered sugar for dusting.

Filling

  • 8 oz 8 oz (250g) mascarpone cheese Use creamy mascarpone.
  • 3/4 cup 3/4 cup (180ml) heavy whipping cream, very cold Ensure cream is very cold for optimal whipping.
  • 1/4 cup 1/4 cup (60g) granulated sugar
  • 1 packet 1 packet vanilla sugar or 1 tsp vanilla extract

Fruits

  • 1 cup 1 cup strawberries, sliced
  • 1 cup 1 cup raspberries
  • 1/2 cup 1/2 cup blueberries
  • Powdered sugar for garnish (optional) Optional garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C). Place the tart crust into a tart pan and prick the bottom with a fork.
  • Bake for 18–20 minutes or until golden brown and crisp. Let it cool completely.

Filling Preparation

  • In a large bowl, mix the mascarpone, sugar, and vanilla until smooth and creamy.
  • In a separate bowl, whip the cold heavy cream until soft peaks form.
  • Gently fold the whipped cream into the mascarpone mixture until light, fluffy, and silky.

Assembly

  • Spread the mascarpone cream evenly into the cooled tart shell.
  • Arrange the strawberries, raspberries, and blueberries generously over the top.

Chilling

  • Chill the Red Berry Tart for at least 1 hour before serving.
  • Dust lightly with powdered sugar right before serving.

Notes

Make sure your heavy cream is very cold to achieve the best whipped texture. You can change the fruits according to the seasons; peaches or apricots could be delightful alternatives. For added flavor, try adding a splash of lemon juice to the mixture. For a chocolate twist, consider adding a layer of chocolate ganache at the bottom before adding the mascarpone cream.
