Ingredients
  

Crust

  • 2 cups chocolate cookie crumbs
  • 6 tbsp unsalted butter, melted

Filling

  • 3 8 oz blocks cream cheese, softened Use room temperature for best results.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup caramel sauce, plus extra for topping
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup chopped pecans
  • Pinch salt
  • 1 cup whipped cream, optional For serving.

Preparation

  • Preheat your oven to 325°F.
  • Grease a 9-inch springform pan and line the bottom with parchment paper.
  • In a bowl, mix the chocolate cookie crumbs with melted butter until evenly coated.
  • Press firmly into the bottom of the pan to create a thick crust.

Making the Filling

  • In a large mixing bowl, beat the cream cheese until smooth and creamy.
  • Add the sugar and continue mixing until fluffy.
  • Add the eggs one at a time, mixing on low speed after each addition.
  • Stir in vanilla extract, sour cream, and a pinch of salt.
  • Fold in the chocolate chips and half of the chopped pecans.

Baking

  • Pour half the cheesecake filling into the crust.
  • Drizzle caramel sauce over the top, then add the remaining filling.
  • Bake for 55-65 minutes, or until the edges are set and the center still has a slight jiggle.
  • Turn off the oven and crack the oven door open slightly. Let the Turtle Cheesecake cool slowly for 1 hour.

Chilling and Serving

  • Chill for at least 6 hours or overnight for the best texture.
  • Before serving, drizzle generously with caramel sauce and melted chocolate, then sprinkle with the remaining pecans.
  • Serve chilled with extra caramel for the ultimate gooey dessert experience.

Notes

For a thicker crust, use more chocolate cookie crumbs and butter. Consider adding a splash of bourbon or dark rum for added flavor. To make a variation, you can swirl in peanut butter before baking.
