Banana Bread

This banana bread is simple, moist, and full of banana flavor. It uses very ripe bananas, a little butter, and warm spices for a classic taste.

Ingredients
  

Main Ingredients

  • 3-4 pieces ripe bananas, mashed Use very ripe bananas for the best flavor.
  • 1/2 cup melted butter
  • 1 cup granulated sugar Can substitute with brown sugar for added flavor.
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1.5 cups all-purpose flour Measure properly by spooning and leveling.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon Can increase to 1 teaspoon for more spice.
  • 1/4 teaspoon nutmeg

Optional Add-ins

  • 1/2 cup chopped walnuts or pecans Optional; toasting adds more flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F. Grease or line a 9x5-inch loaf pan with parchment paper.
  • In a large bowl, mash the ripe bananas with a fork until smooth.
  • Stir the melted butter into the mashed bananas until mixed. Add the sugar and mix until the mixture is smooth and lighter.
  • Crack the eggs into the bowl one at a time, beating well after each. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  • Slowly add the dry ingredients to the banana mixture and fold gently until the flour just disappears. Do not overmix.
  • If using nuts, fold them into the batter now.

Baking

  • Pour the batter into the prepared loaf pan. Spread evenly and tap lightly on the counter.
  • Bake for 55 to 65 minutes, or until a toothpick comes out clean or with a few moist crumbs.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool fully.

Notes

Serve slices warm or at room temperature. Store in an airtight container for up to 3 days or refrigerate for longer storage. Freezes well for up to 3 months.
