  • 1.5 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon vegetable oil For cooking
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 3 cups cooked rice Use cold, cooked rice
  • 1 cup frozen peas and carrots
  • 2 large eggs, beaten
  • 3 each green onions, chopped For garnish
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet chili sauce Adjust for spice preference

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Season chicken cubes with paprika, garlic powder, kosher salt, and black pepper.
  • Add chicken to the skillet and cook until browned and fully cooked, about 7-10 minutes.
  • Push the chicken to one side and add the beaten eggs to the other side, scrambling them until cooked.
  • Add the cooked rice, peas and carrots, soy sauce, and sweet chili sauce.
  • Stir everything together and cook for another 3-5 minutes until heated through.
  • Stir in the chopped green onions before serving.

Notes

Serve hot with extra soy sauce or chili sauce. Goes well with a side salad or spring rolls. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or stir-fry in a skillet.
