Main Ingredients

  • 2 pieces boneless skinless chicken breasts
  • 1 cup sweet and spicy BBQ sauce, divided 1/2 cup for marinating, 1/2 cup for serving
  • 8 slices thick bread (sourdough, white, or whole wheat) Choose thick slices to hold all the fillings
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to use different cheeses
  • 1 cup pineapple slices Fresh pineapple is recommended for better flavor

Instructions
 

Preparation

  • Preheat grill or skillet over medium heat.
  • Marinate chicken breasts in 1/2 cup BBQ sauce for at least 30 minutes.

Cooking

  • Grill chicken for about 6-7 minutes per side or until fully cooked. Let rest and slice.
  • Butter one side of each bread slice.
  • On the unbuttered side, layer with cheese, sliced chicken, pineapple, and more cheese.
  • Top with another slice of bread, buttered side up.
  • Grill sandwiches until golden brown and cheese is melted, about 3-4 minutes per side.

Serving

  • Serve sandwiches hot and crispy, with extra BBQ sauce on the side for dipping.

Notes

If you have leftovers, store in an airtight container in the fridge for up to 2 days. Reheat in a skillet over low heat until warmed through and crispy again. For variations, you can use grilled vegetables or pulled pork instead of chicken.
