Ingredients
  

Base Ingredients

  • ½ cup coconut oil (melted) Make sure it's melted but not hot
  • 1 ½ cups all-purpose flour (or gluten-free substitute) Whole grain flour can also be used for more fiber
  • 1 ½ cups quick oats
  • cup maple syrup Can substitute with agave syrup for vegan option
  • cup coconut sugar (or granulated) Ensure it's vegan-friendly if needed
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup raspberry preserves Feel free to substitute with different flavors

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Spray an 8x8 baking pan with non-stick spray and set aside.
  • In a large bowl, mix all ingredients except for the preserves.
  • Using your hands, press 2/3 of the mixture into the bottom of the pan until it's even and relatively flat.
  • Gently spread the preserves over the pressed mixture, leaving a 1/2" border around the outside.
  • Crumble the remaining 1/3 of the mixture over the top of the preserves and lightly press.
  • Bake for 25-30 minutes on a center rack until lightly browned on top.
  • Let cool in the pan on a cooling rack. Cut and serve.

Notes

Berry Oat Bars can be served alone or with yogurt for creaminess or nuts for crunch. Store leftovers in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to a month. Wrap them well to prevent freezer burn.
