Ingredients
  

For the Cake

  • 1 box dark chocolate cake mix Use your favorite boxed cake mix.
  • 2 cups fresh cherries, pitted Reserve some whole cherries for garnish.

For the Whipped Cream

  • 3 cups heavy whipping cream Ensure it is cold for best results.
  • 0.5 cup powdered sugar Adjust sweetness to taste.
  • 2 teaspoons vanilla extract Use pure vanilla extract for the best flavor.

For the Assembly

  • 0.25 cup kirsch A traditional cherry schnapps.
  • 0.5 cup cherry juice Use unsweetened cherry juice if possible.
  • 1 cup dark chocolate shavings For decoration.

Instructions
 

Bake the Cake Layers

  • Bake the chocolate cake according to package directions in two 9-inch round pans.
  • Let the layers cool completely before removing from pans.
  • Ensure the cake layers are completely cool to prevent melting the whipped cream.

Prepare the Cherries

  • Combine fresh cherries with 2 tablespoons of sugar and let them macerate for 30 minutes.
  • Reserve some whole cherries for garnish.

Whip the Cream

  • Beat heavy cream with powdered sugar and vanilla extract until soft peaks form.
  • Avoid overwhipping the cream to keep it smooth and spreadable.

Add the Cherry-Kirsch Soak

  • Mix cherry juice with kirsch in a small bowl.
  • Brush the mixture generously over both cooled cake layers.

Assemble the Cake

  • Place the first cake layer on a serving plate.
  • Spread half of the whipped cream over it and top with half of the macerated cherries.
  • Add the second layer and repeat with remaining cream and cherries.

Final Decoration

  • Cover the entire cake with the remaining whipped cream.
  • Decorate with dark chocolate shavings and reserved cherries.
  • Refrigerate for at least 2 hours before serving.

Notes

Make ahead: This cake can be prepared 24 hours in advance; store in the refrigerator. Leftover slices can be frozen and thawed in the refrigerator. The cake stays fresh for up to 3 days when refrigerated properly.
