Ingredients

  • 4 poblano peppers halved and deseeded
  • 2 cups shredded brisket smoked or slow-cooked
  • 1 cup shredded cheese cheddar, Monterey Jack, or Mexican blend
  • ½ cup diced onions
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp cumin
  • ½ cup salsa or fire-roasted tomatoes
  • ¼ cup chopped cilantro for garnish

Optional Toppings:

  • Avocado slices
  • Sour cream
  • Extra shredded cheese
  • Jalapeños for extra heat

Instructions

Step 1: Prepare the Poblano Peppers

  • Preheat your oven to 375°F (190°C).
  • Slice the poblano peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up on a baking sheet.

Step 2: Make the Brisket Filling

  • In a medium pan, heat a little oil over medium heat.
  • Add the diced onions and sauté until they’re soft and fragrant, about 3-4 minutes.
  • Stir in the shredded brisket, smoked paprika, garlic powder, and cumin. Let the mixture cook for another 2-3 minutes, allowing the flavors to meld.
  • Add the salsa or fire-roasted tomatoes and stir everything together. Let it simmer for about 5 minutes to allow the flavors to combine.

Step 3: Stuff the Peppers

  • Spoon the brisket mixture into each poblano pepper half, filling them generously.
  • Sprinkle shredded cheese over the top of each stuffed pepper.

Step 4: Bake the Peppers

  • Place the stuffed peppers in the oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown.

Step 5: Garnish and Serve

  • Once the peppers are done, remove them from the oven and sprinkle chopped cilantro over the top for a fresh burst of flavor.
  • Serve immediately with optional toppings like sour cream, avocado slices, extra cheese, or even a few slices of jalapeños for added heat.
