  • 4 cups broccoli florets
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut cream Can use coconut cream for a dairy-free option.
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Preparation

  • Add the broccoli, onion, garlic, vegetable broth, smoked paprika, salt, and pepper to your crockpot.

Cooking

  • Cook everything on low for 6–7 hours or on high for 3–4 hours.
  • Once it’s cooked, use an immersion blender to blend the soup to your preferred texture.
  • Stir in the cream and cheddar cheese, then let it cook on low for another 15–20 minutes until the cheese melts.
  • Serve your soup hot, topped with extra cheese or crunchy croutons for a fun twist!

Notes

For chunkier soup, blend only half of the mixture. You can experiment with different cheeses or add more vegetables for variety. Pair with crusty bread or a salad for a complete meal.
