  • 4 pieces boneless, skinless chicken breasts
  • 1 cup brown sugar, packed
  • 1 cup fresh pineapple chunks (or canned) Fresh is preferred for brightness
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped fresh cilantro (for garnish)

Preparation

  • Season the chicken breasts with salt and pepper.
  • Heat the oil in a large skillet or frying pan over medium-high heat.
  • Add the chicken to the hot skillet and cook about 4–5 minutes per side until golden brown. Remove the chicken and set aside.
  • In the same skillet, add the brown sugar, soy sauce, ketchup, minced garlic, and ground ginger. Stir until smooth.

Cooking

  • Add the pineapple chunks to the sauce and mix.
  • Return the chicken to the skillet, spooning the sauce over each piece.
  • Lower the heat to low, cover, and simmer for 20–25 minutes, or until the chicken is cooked through.
  • Make sure the internal temperature of the chicken reaches 165°F (75°C).
  • Sprinkle chopped fresh cilantro on top for brightness.
  • Move the chicken to a platter and drizzle with extra sauce from the pan.

Notes

Serve the chicken over steamed rice or buttered noodles. Let leftovers cool, then store in an airtight container for up to 3–4 days.
