  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Prepare the Sweet Potatoes:

  • Start by peeling and cubing the sweet potatoes. Place them in a large pot and cover with water. Bring the water to a boil, then simmer for about 10-15 minutes, or until the sweet potatoes are fork-tender.

Shred the Chicken:

  • While the sweet potatoes are cooking, shred your cooked chicken. If you're using a rotisserie chicken, simply remove the skin and pull the meat apart with forks.

Mash the Sweet Potatoes:

  • Drain the sweet potatoes and place them in a large bowl. Mash them using a potato masher or hand mixer until smooth. Add salt, pepper, and garlic powder to taste.

Make the Buffalo Sauce Mixture:

  • In a separate bowl, mix the Greek yogurt (or sour cream) with the hot sauce. Stir until well combined. This will give the casserole that spicy, creamy Buffalo flavor.

Assemble the Casserole:

  • Preheat your oven to 375°F (190°C). In a large baking dish, layer the mashed sweet potatoes at the bottom. Then, add a layer of shredded chicken on top of the sweet potatoes.
