  • 2 tbsp olive oil
  • 3 medium sweet potatoes, peeled and cubed
  • 1 lb cooked shredded chicken
  • 1/2 cup buffalo sauce Adjust for spice preference
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a pot, boil the cubed sweet potatoes until tender, about 15 minutes. Drain and mash with olive oil, salt, and pepper.
  • In a large bowl, mix the shredded chicken with buffalo sauce and half of the cheese.

Assembly

  • In a baking dish, layer the mashed sweet potatoes, then the buffalo chicken mixture.
  • Top with the remaining cheese and green onions.

Baking

  • Bake for 20-25 minutes until bubbly.
  • Serve warm and enjoy!

Notes

This casserole is best served warm right out of the oven. Pairs well with a simple green salad or steamed vegetables. A dollop of sour cream on top can balance out the spiciness of the buffalo sauce.
