  • 1 pound andouille sausage Can substitute with turkey or vegetarian sausage.
  • 4 cups diced potatoes
  • 2 cups chopped vegetables (like celery, onion, and bell pepper) Use any mixture of vegetables you prefer.
  • 2 tablespoons Cajun spices Adjust to taste.
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and black pepper To taste.

  • In a large pot, cook the andouille sausage over medium heat until it’s nicely browned.
  • Add the diced potatoes, chopped vegetables, and Cajun spices; stir everything together.
  • Pour in enough water or broth to cover the ingredients, then bring it to a boil.
  • Reduce the heat and let it simmer until the potatoes are tender.
  • Stir in the heavy cream and cheese. Cook until everything is melted and creamy.
  • Finally, season with salt and pepper to taste. Serve warm and enjoy!

Notes

For added flavor, use homemade broth instead of water. Store leftovers in airtight containers for up to 3 days in the fridge or up to 3 months in the freezer.
