  • 8 oz pasta (penne or fettuccine)
  • 1 lb smoked sausage, sliced
  • 1 whole bell pepper, diced
  • 1 whole onion, diced
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tsp Cajun seasoning
  • to taste salt and pepper
  • 1 tbsp olive oil
  • for garnish fresh parsley, chopped

Instructions
 

Cooking the Pasta

  • Cook the pasta according to package instructions. Drain and set aside.

Cooking the Sausage and Veggies

  • In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
  • Add the diced onion and bell pepper, cooking until softened.
  • Stir in the minced garlic and cook for an additional minute.

Making the Sauce

  • Pour in the heavy cream and Cajun seasoning, stirring to combine.
  • Bring to a simmer and add the cheese, stirring until melted and smooth.

Combining the Pasta and Sauce

  • Toss the cooked pasta into the sauce, mixing well to coat.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

For a quick side, serve with a green salad or simple garlic bread. Cool leftovers to room temperature within an hour, store in an airtight container in the fridge for up to 3–4 days.
