Ingredients
  

Crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted

Filling

  • 2 packages (8 ounce) cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 number apples, peeled and diced Use fresh apples for the best flavor.
  • 1 cup caramel sauce Store-bought caramel sauce works perfectly.
  • 1 teaspoon cinnamon Consider adding nutmeg for additional spice.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a greased baking dish.

Mixing the Filling

  • In another bowl, beat cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  • Fold in the diced apples and cinnamon.

Baking

  • Pour the cream cheese mixture over the crust and spread evenly.
  • Drizzle caramel sauce over the top and use a knife to swirl it into the cheesecake.
  • Bake for 30-35 minutes or until the center is set.

Cooling and Serving

  • Allow to cool, then refrigerate before cutting into bars.

Notes

Store any leftovers in the refrigerator in an airtight container for about 4 to 5 days. You can also freeze these bars for longer storage.
