Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cup sugar
  • 0.5 cup melted butter

For the cheesecake filling

  • 2 cups cream cheese Soften to room temperature.
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups diced apples Use firm, crisp apples.

For the topping

  • 1 cup caramel sauce Warm slightly for easier drizzling.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a baking dish.
  • In a bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish to form a crust.
  • In a large bowl, beat cream cheese until smooth. Gradually add in 1 cup sugar, mixing until combined.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Fold in the diced apples and pour the cheesecake mixture over the crust in the baking dish.
  • Drizzle caramel sauce on top.

Baking

  • Bake for 30-35 minutes or until set.
  • Let cool completely, then refrigerate for at least 3 hours.
  • Cut into bars and enjoy!

Notes

Store in an airtight container in the refrigerator for up to 4 days, or freeze for up to 1 month. Thaw in the fridge before serving.
