Ingredients
  

For the crust

  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.5 cups 1/2 cup unsalted butter, melted

For the cheesecake filling

  • 1 cup 1 cup granulated sugar
  • 2 packages 2 (8 oz) packages cream cheese, softened
  • 1 teaspoon 1 teaspoon vanilla extract
  • 3 large 3 large eggs
  • 2 cups 2 cups peeled and chopped apples Use firm apples for better texture
  • 1 cup 1 cup caramel sauce Store-bought or homemade
  • 1 teaspoon 1 teaspoon cinnamon

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of the prepared pan to form the crust.

Cheesecake Filling

  • In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Fold in the chopped apples and cinnamon until evenly distributed.

Baking

  • Pour the cheesecake mixture over the crust in the baking pan.
  • Drizzle caramel sauce on top, and use a knife to gently swirl it into the cheesecake.
  • Bake in the preheated oven for 35-40 minutes, or until the center is set.
  • Allow to cool, then refrigerate for at least 2 hours before cutting into bars and serving.

Notes

Serve chilled or slightly chilled. A thin drizzle of extra caramel or a sprinkle of sea salt enhances the flavor. For a warm contrast, warm a bar briefly and add a scoop of vanilla ice cream.
