Ingredients
  

Main Ingredients

  • 1 cup raw carrots, shredded 1-2 carrots depending on size
  • 10 pieces medjool dates
  • 1/2 cup raw pecans Chopped
  • 1/2 cup raw walnuts Chopped
  • 1/2 cup rolled oats Use gluten-free oats for gluten-free version
  • 2 tbsp chia seeds
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • a sprinkle of sea salt

Optional Ingredients

  • to cover as desired shredded coconut For coating
  • to serve as desired plain Greek yogurt, creamy peanut butter

Instructions
 

Preparation

  • Wash and peel the carrots. Roughly chop and add them to a food processor to shred. Set the shredded carrots aside in a large mixing bowl.
  • Halve the dates and remove their pits. Place the dates in the food processor with the pecans, walnuts, cinnamon, ginger, and sea salt. Process until the nuts are in small pieces.
  • Combine all processed ingredients into the mixing bowl with the shredded carrots.
  • Add rolled oats and chia seeds to the bowl. Mix everything together with a large spoon. If needed, add a few tablespoons of water to help the mixture stick.

Forming Energy Bites

  • Take about 1 tablespoon of the mixture and roll it into a ball (about the size of a ping-pong ball). You can roll these balls in shredded coconut if you want.

Freezing

  • Place the energy bites on a baking sheet, leaving some space between them. Put them in the freezer for at least 30 minutes.

Serving

  • Serve with a dollop of plain Greek yogurt and creamy peanut butter if you like. Enjoy!

Notes

Store your Carrot Cake Energy Bites in an airtight container in the fridge for up to a week. They can also be kept in the freezer for longer storage. Simply thaw them in the fridge before serving or enjoy them straight from the freezer! Make sure your dates are soft; if they are too dry, soak them in warm water for about 10 minutes before using. For a sweeter taste, you can add a bit of honey or maple syrup. Adjust the spices to your liking by adding more cinnamon or ginger if you enjoy a stronger flavor.
