Ingredients
  

For the Casserole

  • 1.5 pounds lean ground beef Cooked until no longer pink
  • 1 red bell pepper seeded and chopped
  • 1 yellow onion chopped
  • 1 ounce taco seasoning mix
  • ½ cup mild salsa For topping

For the Biscuit Crust

  • 2.5 cups biscuit mix (like Bisquick)
  • 1 cup water
  • Cooking spray (like Pam) For greasing the dish

For the Creamy Layer

  • ½ cup sour cream
  • ½ cup mayonnaise
  • 4 ounces diced green chiles Drained
  • 1.5 cups cheddar cheese, Fiesta Blend, shredded Divided for layers
  • 1 teaspoon garlic powder

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • Heat a large skillet over medium-high. Add the ground beef and cook until no longer pink, stirring occasionally. Drain any excess fat.
  • In a mixing bowl, stir together the biscuit mix and water until combined. Spray a 9 x 13" casserole dish with cooking spray and press the biscuit dough evenly to the edges. Bake for 5–8 minutes until set and lightly golden.
  • Add chopped onion and red bell pepper to the cooked beef and sauté for about 4 minutes. Stir in the taco seasoning mix and remove from heat.

Assembly

  • Spread the beef and vegetable mixture over the prebaked biscuit crust.
  • In a medium bowl, mix the sour cream, mayonnaise, diced green chiles, ¾ cup of the shredded cheese, and garlic powder until smooth. Spread this mixture over the beef layer.
  • Drop spoonfuls of mild salsa over the creamy layer and sprinkle the remaining cheese on top.

Baking

  • Return the casserole to the oven, uncovered, and bake for about 30 minutes, until hot and bubbly. Let rest a few minutes before serving.

Notes

For added flavor, drain cooked beef well to avoid a soggy casserole. Customize by adding cayenne for spice or using cornbread mix instead of biscuit mix.
