  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.25 tsp ground nutmeg
  • 0.5 tsp salt

Wet Ingredients

  • 1 large egg
  • 0.5 cups milk
  • 0.25 cups brewed chai tea (cooled)
  • 0.5 cups melted butter
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 375°F (190°C). Prepare your muffin tin by greasing it or lining it with paper liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, spices, and salt until well combined.
  • In another bowl, whisk together the egg, milk, cooled brewed chai tea, melted butter, and vanilla extract until smooth.
  • Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined; be careful not to overmix.
  • Spoon the batter into your muffin cups, filling each about ¾ full.

Baking

  • Place the muffin tin in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let them cool on a rack.

Notes

For serving, enjoy the muffins warm or at room temperature with a pat of butter or a drizzle of honey. They pair well with chai tea or coffee.
