Ingredients
  

For the cookie dough

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, melted
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup chocolate chips

For the cheesecake filling

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix flour, baking soda, and salt together.
  • In another bowl, beat the melted butter, brown sugar, and granulated sugar until smooth.
  • Add vanilla and egg to the butter mixture and mix well.
  • Gradually add the flour mixture, stirring until well combined. Fold in the chocolate chips.
  • In a separate bowl, mix the cream cheese and powdered sugar until smooth.

Assembly and Baking

  • Take a scoop of cookie dough, flatten it out, and add a spoonful of the cheesecake mixture, then wrap the dough around it.
  • Place the filled cookies on baking sheets and bake for 10-12 minutes until golden brown.

Cooling and Serving

  • Let the cookies cool before serving.

Notes

These cookies are best served warm right out of the oven. For extra flair, dust them with powdered sugar. You can store them in an airtight container at room temperature for about 3-5 days, or freeze them for up to 3 months.
