Ingredients
  

  • 12 oz about 4 cups rotini or penne pasta
  • 2 tablespoons olive oil or butter
  • 2 chicken breasts diced
  • Salt and black pepper to taste
  • 1 packet 1 oz ranch seasoning mix
  • 6 slices bacon cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese optional for extra meltiness
  • 2 cups heavy cream or half-and-half for lighter option
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh parsley or green onions for garnish (optional)

Instructions
 

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.

Cook the Bacon:

  • In a large skillet, cook the bacon over medium heat until crispy. Remove and place on a paper towel-lined plate. Crumble when cooled.

Cook the Chicken:

  • In the same skillet, add olive oil or butter. Season diced chicken with salt, pepper, and half the ranch seasoning. Cook over medium heat until fully cooked and golden, about 6–8 minutes. Remove and set aside.

Make the Sauce:

  • In the same pan, pour in the heavy cream. Stir in garlic powder, onion powder, and remaining ranch seasoning. Bring to a simmer and stir in cheddar and mozzarella cheese. Let melt and thicken for 3–4 minutes.

Combine Everything:

  • Add cooked pasta and chicken to the sauce. Stir well to coat. Add most of the bacon, reserving some for topping. Mix everything until well combined.

Garnish and Serve:

  • Sprinkle with reserved bacon and chopped parsley or green onions. Serve hot and enjoy!

Notes

Tips:

  • Use rotisserie chicken for a shortcut.
  • Add a handful of spinach or broccoli for a veggie boost.
