  • 1 pound lean ground beef
  • 4 to 6 medium Russet potatoes
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheese (cheddar or your choice)

For Serving (Optional)

  • Sour cream
  • Chopped green onions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash and pierce the Russet potatoes with a fork and microwave them on high for 10-12 minutes or until tender.
  • Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh to create a well for the filling.

Cooking

  • In a skillet over medium heat, cook the ground beef until browned. Drain fat if necessary.
  • Add the taco seasoning and water to the cooked beef. Stir well and let simmer for about 5 minutes.
  • Mix the scooped potato flesh into the beef mixture.
  • Fill each potato half with the beef mixture and top with shredded cheese.
  • Place the stuffed potatoes on a baking sheet and bake in the preheated oven for 10-15 minutes, until the cheese is melted and bubbly.

Notes

Cheesy Taco Potatoes are best served warm with a dollop of sour cream and chopped green onions. They pair nicely with a side salad or tortilla chips. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
