Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • 1.75 cups white sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon fine salt
  • 2 large eggs
  • 1 cup cherry cola
  • 1 cup melted butter
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 0.5 cup hot coffee or hot water Enhances the chocolate flavor

For the frosting

  • 1 cup softened butter
  • 3 cups powdered sugar
  • 0.5 cup cocoa powder
  • 3-4 tablespoons cherry cola Adjust for desired consistency
  • 1 teaspoon vanilla extract
  • a pinch salt

Optional garnish

  • maraschino cherries or fresh cherries For decoration

Instructions
 

Preparation

  • Preheat your oven to 175°C (350°F). Grease two 20–23 cm round cake pans and line the bottoms with parchment paper.
  • In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, lightly beat the eggs and then add the cherry cola, melted butter, vegetable oil, and vanilla extract. Mix everything together well.
  • Pour the wet mixture over the dry mixture and mix on low to medium speed until smooth. Then, add the hot coffee or hot water to the batter; it will be a bit runny.

Baking

  • Divide the batter evenly between the prepared pans and bake for 28–32 minutes or until a toothpick inserted comes out clean.
  • Allow the cakes to cool for 10 minutes in the pans before transferring to a wire rack to cool completely.

Frosting

  • To prepare the frosting, beat the softened butter until creamy. Gradually mix in the powdered sugar and cocoa powder.
  • Then, add cherry cola one tablespoon at a time until you reach your desired consistency. Add vanilla and a pinch of salt, mixing until smooth.

Assembly

  • Once the cake layers are fully cooled, spread frosting on top of the first layer, place the second layer on top, and frost the entire cake.
  • If you like, garnish with cherries.
  • Chill your cake a bit before serving for a moist and tantalizing treat.

Notes

To keep your cake fresh, store it in an airtight container at room temperature for about 3 days. If you want to keep it longer, you can refrigerate it and enjoy it within a week. Allow it to come to room temperature before serving for the best flavor.
