Ingredients
  

Broth and Base

  • 6 cups chicken broth Use low-sodium if preferred.
  • 1 medium carrot, sliced thin
  • 1 stalk celery, sliced thin

Noodles and Chicken

  • 8 ounces shirataki noodles Rinse before using.
  • 1 cup cooked chicken, shredded Rotisserie chicken works well.

Seasoning

  • to taste soy sauce Adjust based on preference.
  • to taste salt
  • to taste pepper

Garnish

  • 2 stalks green onions, chopped For topping.

Preparation

  • In a large pot, bring the chicken broth to a boil.
  • Add the sliced carrot and celery, and cook until tender.
  • Stir in the shirataki noodles and cooked chicken, then simmer for 5 minutes.
  • Season with soy sauce, salt, and pepper.
  • Top with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for about 3 days. Reheat on the stove or in the microwave before serving again.
