  • 1/2 cup shredded carrots Freshly shredded for texture.
  • 1/2 count cucumber, sliced Add peeled or unpeeled.
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro Fresh cilantro for flavor.
  • 1/4 cup peanuts, chopped For topping.
  • 1/2 cup peanut sauce Store-bought or homemade.
  • Salt and pepper to taste

Preparation

  • In a large bowl, combine the cooked rice, salad greens, carrots, cucumber, green onions, and cilantro.
  • Season the mixture with salt and pepper.
  • Top with grilled chicken slices.
  • Drizzle peanut sauce over the bowl.

Notes

This dish is best served fresh. For an extra flavor kick, consider adding extra peanut sauce on the side. If you have leftovers, store in an airtight container in the fridge for 2-3 days.
