Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion, diced carrots, and celery, and sauté until softened.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Pour in the chicken broth and bring to a boil.
  • Add the ditalini pasta and cook according to the package instructions.
  • Mix in the shredded chicken and season with salt and pepper to taste.
  • Let it simmer for 5 to 10 minutes until heated through.
  • Serve hot, garnished with fresh parsley.

Notes

Store leftovers in an airtight container for 3-4 days in the refrigerator or freeze for up to 3 months. Cool completely before freezing.
