Ingredients
  

For the Chicken:

  • 4 boneless skinless chicken breasts (or thighs)
  • 1 tsp garlic powder
  • 1 tsp paprika optional
  • Salt and black pepper to taste
  • 2 tbsp olive oil or butter

For the Mushroom Gravy:

  • 2 tbsp butter
  • 1 small yellow onion finely chopped
  • 3 garlic cloves minced
  • 8 oz mushrooms sliced (white button or cremini)
  • 2 tbsp all-purpose flour
  • cups chicken broth
  • ½ cup heavy cream or half-and-half
  • 1 tsp dried thyme or 1 tbsp fresh
  • Salt and pepper to taste

Optional: 1 tbsp Worcestershire sauce or ¼ cup white wine

Instructions
 

Step 1: Season and Sear the Chicken

  • Pat chicken dry with paper towels.
  • Season both sides with garlic powder, paprika (if using), salt, and pepper.
  • Heat 2 tbsp of olive oil or butter in a skillet over medium-high heat.
  • Add chicken and sear for 5–7 minutes per side, until golden and cooked through.
  • Remove and set aside on a plate. Cover loosely with foil.

Step 2: Cook the Mushrooms and Onions

  • In the same pan, reduce heat to medium.
  • Add 2 tbsp butter, chopped onion, and sauté for 2–3 minutes until translucent.
  • Add sliced mushrooms and cook for 6–8 minutes until browned.
  • Stir in minced garlic and cook for 1 more minute.

Step 3: Make the Gravy

  • Sprinkle 2 tbsp flour over the mushrooms. Stir well and cook for 1–2 minutes.
  • Slowly whisk in chicken broth, stirring constantly to avoid lumps.
  • Add cream, thyme, Worcestershire (or wine if using), salt, and pepper.
  • Let the sauce simmer for 5–7 minutes until thickened.

Step 4: Combine Chicken and Gravy

  • Return chicken to the pan, spooning gravy over each piece.
  • Simmer for 5–10 minutes on low heat to meld flavors.
  • Taste and adjust seasoning as needed.
