  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 1 1/2 cups semi-sweet chocolate chips

  • 1 1/2 cups heavy whipping cream For topping
  • 1/4 cup powdered sugar For topping
  • 2 tbsp cocoa powder For topping

Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease and line an 8-inch round cake pan.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add eggs, buttermilk, oil, and vanilla extract. Mix until smooth.
  • Slowly pour in the hot coffee. The batter will be thin.
  • Pour the batter into the prepared pan and bake for 40–45 minutes, or until a toothpick inserted in the center comes out mostly clean.

Ganache Preparation

  • Let the cake cool completely before adding the ganache.
  • To make the ganache, heat the heavy cream until steaming. Pour over chocolate chips and butter.
  • Let sit for 2 minutes, then stir until glossy and smooth.
  • Pour the ganache over the cake, letting it drip down the sides.

Topping

  • Beat the whipping cream, powdered sugar, cocoa powder, and vanilla until thick and fluffy.
  • Pipe or spoon generous swirls on top of the cake.
  • Decorate with brownie chunks, chocolate pieces, cookie crumbs, and a light dusting of powdered sugar.
  • Chill slightly before serving.

Notes

Use quality cocoa powder for enhanced flavor. Don't over-mix the batter to keep the cake light and fluffy. Let ganache cool slightly before pouring it over the cake. Adjust sweetness as desired.
