Dry Ingredients

  • 1.75 cups all-purpose flour
  • 0.75 cups unsweetened cocoa powder Use quality cocoa powder for better flavor.
  • 2 cups granulated sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 2 large eggs Use room temperature.
  • 1 cup whole milk Allow to come to room temperature.
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Don’t skip this step.

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Mix everything well.
  • Add the eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for about 2 minutes.
  • Carefully stir in the boiling water; your batter will be thin—this is normal! Pour the batter into the prepared pans.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool for 10 minutes in the pans, then remove them to a wire rack to cool completely.

Notes

If desired, top with your favorite frosting, whipped cream, or fresh berries. Store leftover cake wrapped tightly in plastic wrap to prevent drying out.
