For the Batter

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cherries, pitted and chopped
  • 1 cup chocolate chips

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large bowl, melt the butter and mix in the brown sugar and granulated sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients until just combined.
  • Fold in the chopped cherries and chocolate chips.
  • Pour the batter into the prepared baking dish and spread evenly.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool before cutting into bars and serving.

Notes

These bars can be served warm or at room temperature, and can be complemented with vanilla ice cream or whipped cream. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, freeze tightly wrapped for up to 3 months.
