Ingredients
  

For the cookie dough

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

For coating (optional)

  • 1/4 cup granulated sugar For coating the cookie bites

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan with non-stick spray.
  • In a bowl, beat the softened butter with granulated and brown sugars until smooth and creamy.
  • Add in the egg and vanilla extract, then beat until fluffy and well combined.
  • In another bowl, whisk together the flour, cornstarch, baking soda, and salt.
  • Gradually mix the dry ingredients with the wet ingredients until a soft dough forms. Gently fold in the chocolate chips.
  • If you’d like, roll tablespoon-sized balls of dough in granulated sugar, then place them in the muffin pan.

Baking

  • Bake for 9–11 minutes or until the edges are golden and the tops are set.
  • Let them cool for 10 minutes before removing from the pan and transferring to a wire rack.

Notes

Don’t overbake! These cookie bites firm up as they cool, so take them out when the edges are lightly golden. Sugar coating is optional but gives them a sweet crunch and bakery-style sparkle. Grease the pan well so the cookie bites pop out easily.
