  • 2 cups almond flour Measure accurately for best results.
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup + 1 tablespoon maple syrup Can substitute with honey or agave.
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon pure vanilla extract
  • 1/3 cup dark chocolate chips Feel free to adjust the amount based on your preference.

Preparation

  • Set your oven to 350°F (175°C). Lightly grease a skillet with a bit of coconut oil.
  • In a big bowl, mix together almond flour, baking soda, salt, maple syrup, olive oil, and vanilla extract.
  • Gently fold in the chocolate chips and let the dough sit for 5 minutes.
  • Spoon the dough into the prepared skillet and spread it out evenly. Press down gently.

Baking

  • Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center is set.

Serving

  • Let the skillet cookie cool in the pan for a few minutes. It will firm up as it cools. Add a scoop of ice cream, slice, and serve warm.

Notes

Store leftover skillet cookie in the refrigerator for up to 3 days. Reheat individual slices in the microwave for a few seconds before serving. Don't overbake for a chewy texture.
