  • 2 cups grated zucchini Squeeze out excess moisture before use.
  • 1 cup all-purpose flour Can be replaced with whole wheat flour for nuttier flavor.
  • 1 cup sugar
  • 1/2 cup vegetable oil Can substitute with plant-based oil for vegan option.
  • 2 large eggs Can use flax eggs for vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup chocolate chips Use semisweet or milk chocolate chips.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan.
  • In a large bowl, combine the grated zucchini, sugar, and vegetable oil.
  • Add eggs and vanilla extract, mixing well.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chocolate chips.
  • Pour the batter into the prepared loaf pan.

Baking

  • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

Serve warm or at room temperature. Delicious on its own or with butter. It can also be paired with coffee or tea.
