Ingredients
  

For the mousse

  • 200 g dark chocolate, chopped High-quality chocolate for best flavor.
  • 3 large eggs, separated Egg whites should be at room temperature.
  • 1/4 cup sugar Adjust to taste.
  • 1 cup heavy cream Whipped to soft peaks.

For the base layer

  • 100 g biscuits or graham crackers, crushed Use a food processor for even crumbs.
  • 50 g butter, melted Unsalted butter recommended.

For the glaze

  • 150 g dark chocolate, chopped For a shiny finish.
  • 1/2 cup heavy cream Heating cream before adding chocolate.

Instructions
 

Preparation

  • Prepare the base layer by mixing crushed biscuits with melted butter and pressing into the bottom of a springform pan. Chill in the refrigerator while preparing the mousse.
  • Melt 200g of dark chocolate over a double boiler and let it cool slightly.
  • In a separate bowl, beat the egg whites until soft peaks form, gradually adding sugar until stiff peaks form.
  • Fold the egg yolks into the melted chocolate, then fold in the whipped cream until fully combined.
  • Gently fold in the beaten egg whites until no white streaks remain.

Assembly

  • Pour the mousse over the chilled base layer and smooth the top. Refrigerate for at least 1 hour to set.
  • For the glaze, heat 1/2 cup heavy cream until just boiling, then pour over 150g of chopped chocolate. Stir until smooth, then let cool slightly before pouring over the set mousse.
  • Chill the cake again for at least 30 minutes to set the glaze.

Serving

  • Slice and serve well chilled. Optionally, garnish with fresh berries or a light dusting of cocoa powder.

Notes

This cake is rich; a small slice is fulfilling. Perfect for special occasions or upscale dessert tables.
