Ingredients
  

For the cake

  • 3 large eggs
  • 90 g granulated sugar
  • 60 g flour
  • 30 g cocoa powder
  • 1 teaspoon baking powder
  • 60 ml melted butter

For the mousse layers

  • 200 ml cream whipped to soft peaks
  • 100 g white chocolate (melted)
  • 2 teaspoons gelatin mixed with 2 tablespoons of water
  • 1 teaspoon granulated coffee or vanilla extract
  • 200 ml cream for milk chocolate mousse
  • 120 g milk chocolate (melted)
  • 2 teaspoons gelatin mixed with 2 tablespoons of water for the next layer
  • 120 g bitter chocolate
  • 120 ml hot cream for chocolate ganache

For decoration

  • whipped cream for decorating
  • mini cookies or biscuits for decorating
  • chocolate chips or shavings for decorating

Instructions
 

Preparation of the cake

  • Preheat your oven to 350°F (175°C).
  • In a bowl, beat the eggs and sugar together for about 3 to 4 minutes until the mixture is light and fluffy.
  • Sift the flour, cocoa powder, and baking powder into the bowl, then gently fold everything together.
  • Add the melted butter and mix it in, then pour the batter into a 20 cm baking pan.
  • Bake for 20 to 25 minutes, then let the cake cool in the pan.

Preparation of the mousse layers

  • Mix gelatin with water and let it sit for 5 minutes.
  • In a separate saucepan, heat the cream and then mix in the melted chocolate until smooth.
  • Add the gelatin mixture and stir until it dissolves.
  • Whip the remaining cream to soft peaks and gently fold it into the chocolate mix.
  • Pour the first layer of mousse over the cooled cake and refrigerate for about 30 to 40 minutes. Repeat this process for the milk chocolate mousse layer.

Preparation of the ganache

  • Chop the dark chocolate and pour the hot cream over it.
  • Stir until smooth and then pour this ganache over the cooled mousse layers.
  • Refrigerate for at least 4 hours, or overnight if you can wait!

Decoration

  • Decorate your masterpiece with whipped cream, mini cookies, and chocolate shavings.
  • Serve it cold with a steaming cup of espresso or Turkish coffee for the perfect finish.

Notes

For best results, use quality chocolate and beat the eggs well to achieve a light texture. Store leftovers covered in the refrigerator for up to 3-4 days.
