  • 100 g Dark Chocolate Aim for 60% to 72% cocoa.
  • 250 ml Heavy Cream Should be at least 36% fat.
  • 2 tablespoons Sugar Use only 3 tablespoons due to the natural sweetness of chocolate and orange juice.
  • 1 teaspoon Vanilla Extract Acts as a flavor bridge.
  • 1 pinch Salt Enhances the flavor.
  • 2 Oranges (Zest and Juice) Zest before juicing to avoid bitterness from the pith.

Instructions
 

Melting and Tempering

  • Melt the dark chocolate in a microwave in 15-second intervals, stirring vigorously between each session until smooth.
  • Let the melted chocolate cool to room temperature (90°F or 32°C) to avoid deflating the whipped cream when combined.

Achieving the Perfect Peak

  • Whip the heavy cream on low speed to build small bubbles, then increase to medium-high speed to form soft peaks.

Citrus Integration

  • Whisk the orange juice and zest into the cooled chocolate until thickened.

Folding

  • Gently fold one-third of the whipped cream into the chocolate to lighten it.
  • Add the remaining whipped cream and fold gently using a rubber spatula until no streaks remain.

Setting and Serving

  • Pour the mousse into a prepared tin and chill for a minimum of 2 hours, or overnight for better flavor.
  • For clean slices, dip a knife in hot water, wipe dry, and make single downward cuts.

Notes

For variations, try adding a base of crushed chocolate orange biscuits, using Grand Marnier instead of some orange juice, or garnishing with candied orange slices.
