Ingredients
  

Dry Ingredients

  • 3 cups quick-cooking oats
  • ¼ teaspoon salt Skip if using salted butter.
  • ¼ cup unsweetened cocoa powder

Wet Ingredients

  • ½ cup butter Use unsalted for best flavor.
  • 1 ⅔ cups sugar
  • ½ cup milk
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract

Instructions
 

Preparation

  • In a large bowl, stir together the oats and salt. Set aside.
  • In a small saucepan over medium-high heat, whisk together the butter, sugar, milk, and cocoa.

Cooking

  • Bring the mixture to a boil for about one minute, then remove from heat.
  • Whisk in the peanut butter and vanilla until fully combined.
  • Pour the hot chocolate-peanut butter mixture over the oats and stir until everything is coated.

Assembly

  • Line a baking sheet with wax paper. Drop the cookie mixture onto the wax paper using a medium cookie scoop.
  • Let the cookies cool on the countertop. Once cool and dry, store them in the refrigerator.

Notes

If using salted butter, skip the additional salt. Measure all ingredients beforehand to move quickly once the chocolate mixture comes off the heat.
