For the cake

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup boiling water

For the pudding topping

  • 1 cup chocolate pudding mix
  • Whipped cream (optional, for serving)

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  • In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt.
  • Stir in the milk, vegetable oil, and vanilla extract until well combined.
  • Gradually add the boiling water to the mixture, stirring continuously.
  • Pour the batter into the prepared cake pan.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Once cooled, gently fold in the chocolate pudding mix and spread it over the top of the cake.
  • Slice the cake and serve with whipped cream if desired.

Notes

Serve the cake warm or cold, and consider adding fresh berries on top for a color contrast and extra tartness. Store leftovers in an airtight container in the fridge for up to three days.
